Beginner’s Sushi Rolls – Serves 4

  • 1 cup sushi rice (uncooked)
  • 3 cup water
  • 2 tbs mirin
  • 3 sheet nori seaweed
  • Soy sauce to serve

Filling options

  • Chicken schnitzel or BBQ chicken (cold and cut into strips)
  • Tuna (Can be mixed with mayo as well)
  • Capsicum (cut into thin slices)
  • Cucumber (cut into thin slices)
  • Avocado (cut into thin slices)

  1. Place uncooked rice in 3 cups of cold water, bring to a boil and simmer until cooked.
  2. Once the rice is cooked, add the mirin and mix thoroughly to the hot rice and let cool
  3. Prepare all the ingredients and have them ready to use.
  4. Lie a seaweed sheet over the bamboo mat (this can be bought at most major supermarkets) and position the two lengthways away from you.
  5. Place a little of the cooled rice (about 1/4 of a cup) on the near side of the seaweed sheet and flatten it into a rectangular shape into a sausage shape, leaving about 3cm of the seaweed sheet clear of rice nearest to you.
  6. Place a little of the filling across the centre of the rice and then gently pick up the end of the bamboo mat closest to you and start rolling away from your body as tightly as possible.
  7. Make sure you leave about 3cm at the far end of your roll without rice/filling. When you have finished rolling, dip your fingers into the water and wet the strip of seaweed on the end to close and seal the sushi.
  8. With a sharp knife, chop the sushi into bite-sized pieces and serve with soy sauce.
