An easy homemade vegetable pizza

Ingredients (Serves 4)

Vegetable Pizza Dough

  • 7 cups self-raising flour 
  • 5 tbsp powdered milk 
  • 5 tbsp sugar 
  • 2tsp salt 
  • 125g margarine 
  • 800ml water 

Vegetable Pizza Toppings 

  • 1 cup halved cherry tomatoes 
  • ½ cup pitted Kalamata olives, halved lengthwise 
  • 1 cup fresh red or orange capsicum, diced 
  • Tomato paste 
  • Mix of tasty and mozzarella cheese 
  • 2 cups baby spinach 
  • Optional: You can add any other vegetables that you love to this, or even some cheeky pineapple 

Method

  1. Preheat oven to 200 degrees 
  2. Mix pizza base dry ingredients in a large bowl 
  3. Rub in margarine by hand and add water until a soft dough is formed  
  4. Roll out dough into a thin layer and place on a greased baking tray 
  5. Spread tomato paste on base and sprinkle with cheese 
  6. Add vegetables on top and add more cheese 
  7. Bake for around 20-25 minutes 

By now your family should be gathered around because of the magical aromas drifting through your house. Slice up your pizza, let is cool slightly and enjoy!
