Quick and easy banana and date cookies
Weekends are always jam-packed and we know that many families are active and on the go. These banana and date cookies are a great snack to take with you on the go. Best of all they are dairy free and refined sugar-free too, so they are perfect to share with friends with these food intolerances.
These cookies are packed with bananas, which are high in potassium, magnesium and vitamin A which supports children’s vision. The dates act as a natural sweetener and support healthy iron levels in children. So give these cookies a go this weekend!
Ingredients
- 2  cups all-purpose flour
- 1 ½ teaspoons ground cinnamon
- 1  teaspoon baking soda
- 1  teaspoon baking powder
- 1  teaspoon salt
- 1  cup coconut oil
- 2 cups mashed banana
- 1  teaspoon vanilla extract
- 3  cups quick oats
- nonstick cooking spray
- 2  tablespoons oats milk
- 1 cup  chopped dates
Method
- Whisk flour, cinnamon, baking soda, baking powder, and salt in a medium bowl until well combined.
- Add coconut oil and 2 cups of mashed banana in a large bowl and mix until creamy, at least 2 to 3 minutes.
- Next, mix in vanilla and oats milk.
- Gradually mix in dry ingredients until well combined. Add oats and mix until thoroughly incorporated. Cover the bowl and chill the dough in the refrigerator for at least 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C) when you’re ready to bake.
- Form small dough balls into cookie shapes.
- Bake in the preheated oven until light golden brown.Â
