Every great pizza begins with a great pizza base. Some like it thin and crispy, while others prefer a thick, bready and soft crust. This homemade pizza crust has it all: soft & chewy with a delicious crisp a delicious flavour.

Ingredients

Pizza base

  • 70g plain flour
  • 40ml warm water
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon Yeast
  • 10ml extra virgin olive oil

Tomato sauce

  • ½ clove of garlic
  • ½ bunch of fresh basil
  • Olive oil
  • 100g tin of crushed tomato

Toppings

  • 1 tomato, sliced
  • 1 capsicum, diced
  • 4 cup mushroom, sliced
  • 100g ham, diced
  • 2 cups shredded cheese

Method

Dough

  • Combine water and yeast in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour, sugar and salt in a large bowl and make a well in the centre. Add the yeast mixture and oil. Mix everything until the mixture is combined. Use your hands to bring the dough together in the bowl.
  • Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught-free place to rise for 30 minutes or until dough doubles in size.
  • Dust the work surface with flour. Knead the dough and form it into a long cylinder. Divide into thirds. Use a rolling pin to roll each third into a 20cm disc.

Sauce

  • Peel and finely slice the garlic, then pick the basil leaves and finely chop the stalks.
  • Heat 1 tablespoon of oil in a pan on medium-low heat, add the garlic and basil stalks, then cook gently for a couple of minutes, or until the garlic is lightly golden, then add most of the basil leaves, the tomatoes and a pinch of salt and pepper.
  • Leave the sauce to tick away for around 20 minutes, or until smooth, breaking up the tomatoes up with a wooden spoon. When the time’s up, taste, and season to perfection.

Toppings

  • Spread the tomato sauce over the base, spreading it out to the edges.
  • Spread all the vegetables over the tomato sauce, then spread cheese on top.
  • Cook the pizzas on a piece of granite or a pizza stone in your conventional oven for 10 to 15 minutes, until the pizzas are golden and crispy.
