Wagyu Meatball Pasta (Serves 4)

Ingredients

Meatball: 

  • 500g wagyu minced beef, the fat gives the dish more flavour and tender 
  • ½ onion, finely chopped, a little more flavour and texture 
  • 2 garlic cloves, minced, a little more flavour and texture 
  • 3 tbsp breadcrumbs, make to meatball more tender 
  • 3 tbsp grated parmesan, add the wonderful flavour to the meatball 
  • ¼ tsp salt 
  • ¼ tsp black pepper 
  • 1 tbsp oil 
  • 1 tbsp unsalted butter  
  • 1 egg, bind everything together  

Sauce: 

  • 1 onion, finely chopped   
  • 2 garlic cloves, minced 
  • ¼ tsp salt 
  • ¼ tsp black pepper 
  • 100ml beef stock 
  • 400g tin of chopped tomato  
  • 2 tbsp tomato paste 
  • 1 tsp dried thyme 
  • 1tsp light brown sugar 
  • 100g baby spinach leaves 
  • 2 stalks fresh basil 
  • 200g dried spaghetti, or other pasta 
  • Shaved or grated parmesan 
  • 1 tbsp fresh basil, roughly chopped 

Method

  • Cook the pasta in the boiling water according to the instructions on the package. 
  • Meanwhile, place the minced beef, onion, egg, parmesan, breadcrumbs, salt, and pepper into a large bowl. Mix all the ingredients, then form the mixture into 20-24 meatballs. 
  • Heat the oil and butter in a large frying pan or skillet and add in the meatballs. Cook for 3-4 minutes on medium-to-high heat, turning a few times until the meatballs are browned all over. (They don’t need to be fully cooked at this point, as they’ll cook further in the sauce.) 
  • Leave the meatball on the side. Add onion and garlic to the pan and cook for 2 mins until the onions start to soften. Add in the tin of tomatoes, tomato puree, thyme, brown sugar and beef stock. Stir everything together and bring the sauce to the boil. 
  • Turn the heat down to low, cook for 5 minutes, then add the meatball to the sauce to cook for a further 5 minutes. When the meatball is cooked, add in baby spinach leaves, salt and pepper to cook for 1 minute. 
  • Spoon the pasta in the bowl, then meatballs and sauce on top.  
  • Serve your Wagyu meatball pasta with shaved parmesan and chopped fresh basil and enjoy your meal!
