A Quick and Easy Stir Fried Hokkien Noodles

Stir-Fried Hokkien Noodles – Serves 4

Stir Fired Hokkien Noodles are a filling meal on a cool evening.

Ingredients: 

  • 500g hokkien noodles 
  • 2 tbsp canola oil 
  • 2 garlic cloves, finely minced 
  • 1 medium carrot, cut into strips 
  • 1 red capsicum, cut into strips 
  • ½ green cabbage, cut into strips 
  • 1 small pack of tofu, 300g, cut into strips (or 300g chicken strips) 

Sauce Ingredients:

  • 2 tbsp light soy sauce 
  • 2 tbsp dark soy sauce 
  • 2 tbsp oyster sauce 
  • 1 tbsp Chinese cooking wine 
  • 1 tbsp sesame oil 
  • ¼ tsp white pepper 
  • Garnish: sesame seeds or green shallots 


Method:  

  1. Prepare noodles per the packet directions. (Usually, soak for a few minutes in a large bowl of boiling water. Then rinse and drain in a colander under the tap water.) 
  2. Heat the oil in a large non-stick pan over high heat until very hot, add garlic, cabbage, carrot and capsicum.
  3. Toss 1 minute, add tofu in, stir for a further 2 minutes until the vegetables are mostly wilted and tofu is a nice golden colour.  
  4. Add noodles and sauce, stir for 2 minutes until the noodles are stained a mahogany colour.  
  5. Serve immediately, sprinkled with sesame seeds and green shallots!
