Let’s Make Colourful Golden Veggie Trios
Picture this, it’s a rainy day and you want to make something together as a family. Our little Golden Veggie Trios are just the thing. These little parcels are perfect to share and delightfully warming. Your children will love the bright colours of the corn and peas, coupled with delicious spices.
Making Golden Veggie Trios becomes a fabulous hands-on experience to get your children involved in. Making each parcel has many steps, so you could make it fun by setting up a production line together with one child filling the parcels and another wrapping them, or pressing down the edges with a fork.

Golden Veggie Trios – Serves 10
Ingredients
- 1 tsp oil
- ½ tsp cumin seeds
- ¼ tsp turmeric powder
- ½ tsp sweet paprika
- A pinch of black pepper
- Salt to taste
- ½ tsp chaat masala
- ¼ cup frozen peas
- ¼ cup diced carrot
- ¼ cup frozen corn
- 1 cup boiled and mashed potatoes
- ¼ cup mashed paneer
- 2 tbsp chopped coriander
- Puff pastry sheets (store-bought, thawed)
Method
Prepare the filling:
- Heat oil in a pan.
- Add cumin seeds; let them sizzle.
- Add turmeric, paprika, black pepper, and a pinch of salt. Stir quickly.
- Add peas, carrots, and corn. Cook 2–3 minutes until slightly soft.
- Add mashed potatoes and paneer. Mix well.
- Add chaat masala and chopped coriander. Mix and remove from heat. Let it cool.
Prepare the puff pastry:
- Roll out the puff pastry sheet slightly on a floured surface.
- Cut into rectangles (about 3×6 inches).
Shape the samosas:
- Take one rectangle. Fold it in half lengthwise to form a long strip.
- Place 1–2 tablespoons of the filling at one end.
- Fold into a triangle or rectangle shape, sealing the edges as you go
- Seal edges with a little water.
Bake or fry:
- To bake: Preheat oven to 200°C (400°F). Place samosas on a baking tray lined with parchment paper. Brush lightly with oil or milk. Bake 15–20 minutes until golden and crisp.
- To fry: Heat oil in a pan and fry until golden brown.
- Serve: Enjoy hot with chutney or ketchup!
