An easy yoghurt curry to make at home
If you love to make curries at home and want your children to love them as much as you do, then this is a great dish for them to try! This is a mildly spiced, creamy curry filled with a mixture of flavoursome, tangy spices and vegetables.
It’s great to introduce your children to different flavours to help them enjoy different cuisines and not to be afraid to explore and have fun with their food.
Yoghurt Curry with Rice – Serves 2
Ingredients
For Rice
- 1/2 cup rice
- 1 1/2 cups of water
- Pinch of salt
For Yoghurt Curry
- 1 1/4 cup thick Greek yoghurt
- 3 tbsp chickpea/gram flour
- 2/3 cup water
- 1/2 tsp turmeric powder
- 2 tbs tomato paste
- 1 tsp sweet paprika
- 1 tsp black paper
- 1/2 tsp coriander powder
- Spinach, carrot, cauliflower and potato
- Pinch of curry leaves
- 1/4 tsp cumin powder
- 1 tsp garlic paste
Method
For Rice
- On high heat bring water, rice and salt to a boil in a saucepan.
- Lower heat and simmer for 15 minutes or till the rice is completely cooked.
- Drain any excess water.
- Put rice in a bowl and set aside till serving time.
For Yoghurt Curry
- In a mixing bowl, whisk chickpea/gram flour and water until smooth.
- Add yoghurt a 1/4 cup at a time and mix until homogenous.
- Add sweet paprika powder, turmeric and salt.
- Heat oil in a saucepan on med-high and add, coriander seeds, black paper and cumin. When spices get fragrant mix in garlic paste.
- Mix in yoghurt mixture, stirring constantly, until it starts to boil.
- Lower heat and simmer for 10-15 minutes on low until curry thickens.
- Add all vegetables to the curry and cook until tender.
- Serve with rice and enjoy!
